Maple Salmon Bites

Salmon bites are the perfect addition to stir-fry, grain bowls, or salads. They’re so easy to make and get that perfect crisp on all sides.

These maple glazed salmon bites are sweet, slightly spicy, and are delicious over rice. They’re lightly seasoned and pan-fried, then cooked in the simplest maple sriracha glaze.

Salmon and rice is one of my favorite comfort meals during the week. It’s a great way to pack in omega-3 fats and protein, and can be prepared in endless amounts of ways.

How to make maple sriracha salmon bites

  1. Start by cutting your skinless salmon into 1″ cubes and seasoning them with chili powder, smoked paprika, salt, pepper, garlic powder and olive oil
  2. Next, sear them on a hot pan for about 3 minutes per side until nice and browned
  3. While they’re cooking, prepare your sauce by mixing together the maple syrup, sriracha, garlic and salt
  4. Drain out some of the excess oil from the pan and pour the sauce into the pan. Let the salmon simmer for a couple of minutes
  5. Garnish with chopped parsley and serve with your favorite veggies and side of rice

The sweet salmon bites come out flakey and delicious, and come together in 30 minutes or less. You guys are going to love this recipe!

Ingredients

  • 1-1.5 lb skinless salmon
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1/2 tsp salt
  • 2 tbsp olive oil

Maple Glaze

  • 1/4 cup maple syrup
  • 2 tbsp sriracha
  • 1 clove garlic, crushed
  • Pinch salt
  • Chopped parsley, to top

Directions

  1. Cut your salmon into 1″ cubes. Add it to a bowl with 1 tbsp of olive oil and the spices. Toss together to coat the salmon evenly
  2. Prepare your maple sauce by mixing together the maple, sriracha, garlic and salt in a small bowl and set it aside
  3. Heat a large pan on medium heat, then add in 1-2 tbsp of olive oil
  4. Add the salmon cubes to the hot pan and cook for about 8-10 minutes total, flipping the salmon every couple of minutes
  5. Once the salmon is browned on all sides, discard some of the excess oil by tilting the pan slightly and soaking some of the oil with a paper towel
  6. After discarding some oil, lower the heat and pour in the maple sriracha sauce. Cook for another 1-2 minutes, spooning the sauce over the salmon
  7. Garnish with fresh chopped parsley and serve over rice

Simple sandwiches are a go-to of mine during busy weeks, and this grilled honey mustard chicken sandwich is the perfect way to pack in carbs, fiber and protein for a nourishing lunch. 

I used @kensdressing creamy Honey Mustard Dressing for the marinade, which is sweet, tangy, and incredibly versatile— it’s a pantry staple and a delicious way to elevate your proteins as we transition into fall!

Recipe:
Sesame baguette or bread of choice 
2 chicken breast
¼ cup Ken’s Honey Mustard dressing
1 red bell pepper, sliced 
1 zucchini, cut into coins 
Mixed greens
Olive oil
Salt & pepper

1. Add the sliced bell pepper and zucchini to a sheet pan and drizzle with olive oil and a pinch of salt. Set the vegetables under the broiler until they’re charred, for about 5-6 minutes- keeping a close eye
2. Heat a grill pan with 2 tbsp of olive oil on medium heat 
3. Marinate the chicken breast with the honey mustard dressing, a drizzle of olive oil and salt & pepper. Toss to combine
4. Grill the chicken for about 15 minutes total, flipping every couple of minutes until fully cooked through to 165 F 
5. Assemble your sandwich by toasting your bread and adding the mixed greens, grilled chicken, extra honey mustard dressing and the roasted vegetables
