Lemon & herb smashed potatoes are the perfect side dish to any meal! They’re boiled, smashed, then roasted until crispy with lemon zest and fresh herbs.

Lemon & Herb Smashed Potatoes

Smashed potatoes have easily become one of my favorite side dishes. They’re easy to make and packed with delicious lemon and herb flavor.

They come out tender on the inside, crisp on the outside, and are the perfect side dish to any meal!

These crispy potatoes the perfect recipe for a dinner party or a weeknight meal. They pair well with my citrus & herb salmon, which has a similar marinade mixture, or my favorite falafel veggie burgers.

I love topping them with sour cream, but you can serve them with your favorite dipping sauce.

What you’ll need to make smashed potatoes

  • Baby Yellow Potatoes
  • Olive oil
  • Fresh herbs, like parsley, cilantro and chives
  • Salt & pepper
  1. Start by boiling your baby potatoes in a large pot of water until fork tender, for about 20 minutes
  2. Once they’re soft, add them to a sheet pan and smash them flat using the bottom of a cup
  3. Once they’re smashed, brush them with the lemon herb mixture
  4. Roast them in your preheated oven for about 40-45 minutes and serve with your favorite dips!

They turn out so crispy and buttery on the inside, with the most delicious lemony herb flavor. I seriously can’t get enough of them, and can’t wait for you guys to try them!

Ingredients

  • 1 lb baby yellow potatoes

Lemon Herb Marinade

  • 1/4 cup olive oil
  • 1 tbsp dijon mustard
  • 2 tsp lemon zest, plus more to top
  • 2 cloves garlic, crushed
  • 3 tbsp chopped parsley
  • 3 tbsp chopped cilantro
  • 2 tbsp fresh chives, chopped
  • Salt & pepper

Directions

  1. Preheat the oven to 400 F
  2. Bring a large pot of salted water to a boil and boil the potatoes for about 15-20 minutes, until they’re fork tender. Drain out the water and add the potatoes to a parchment lined sheet pan
  3. Using the bottom of a glass, smash each potato down
  4. In a small bowl, add all of the lemon herb ingredients and whisk together to form a paste
  5. Brush each potato with some of the mixture. You can save some to brush over after baking
  6. Bake the potatoes for 30 minutes. Raise the oven temperature to 425 F, flip them and bake for an additional 12-15 minutes
  7. Once ready, brush any remaining marinade over the potatoes and top with extra lemon zest
  8. Serve with sour cream or your favorite dip!
