Halloween weekend is here, which only means one thing- ALL the candy! While I most definitely will be eating the real, store bought chocolates that come my way, I still love creating my own versions of them- with a twist. I rounded up 6 of my favorite homemade candy bars for anyone who loves to play around in the kitchen, and needs dairy-free versions of their favorite treats.

We’ve got Snickers, Twix, Reese’s Peanut Butter Eggs, Take5, Butterfingers and Almond Joy! All of these versions are gluten and dairy-free, and can all be made vegan.

These homemade chocolates are SO good, you’ll want to stock your freezer with them all year round. Enjoy, friends 🙂

1. Vegan Snickers

Homemade vegan snickers bars made with dates, nuts, and a few other simple ingredients! These delicious chocolate bars are filled with a creamy date caramel and have a crunchy peanut base.

2. Gluten-free Twix Bars

My personal favorite chocolate bar, vegan twix bars! Shortbread crust with a nut butter caramel and dark chocolate coat- you really can’t go wrong with these! They’re gluten-free, dairy-free and so addicting!

3. Dairy-free Butterfingers

Crunchy and sweet homemade butterfingers! Made with only 6 simple ingredients, and coated in dairy-free chocolate. Trust me, you won’t even miss the real version.

4. Vegan Reese’s Eggs

These peanut butter eggs have the perfect taste and texture, and are just like the real deal. A rich peanut butter filling that’s coated in dark chocolate and topped with sprinkle of sea salt- it doesn’t get much better than that. Feel free to shape them into pumpkins for Halloween!

5. Take 5 Bars

One of my oldest candy recipes- vegan Take 5 Bars! This 5 layer chocolate bar is made with peanut butter, pretzels, date caramel, peanuts, and dairy-free chocolate.

6. Vegan Almond Joy

Last but not least, homemade almond joy! A delicious coconut bar topped with whole almonds, and coated in melted chocolate! They’re vegan, gluten-free, and and made with just 7 simple ingredients.

one thing about me is I will always have a colorful pasta salad in the fridge during the warmer months— it’s the perfect way to pack in carbs, fiber and protein for a quick & nourishing lunch
 
this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
