Spicy Salmon Sushi Bake

This spicy salmon sushi bake is a deconstructed sushi roll made with all of your favorite sushi flavors. It has a layer of sticky sushi rice with spicy baked salmon, avocado and jalapenos, and topped with a heavy drizzle of spicy mayo
& sweet sauce.

It’s the perfect meal to throw together for family dinner or a crowd, and one of my go-to recipes to make whenever I have leftover baked salmon.

This sushi bake was trending on Tiktok for the longest time, so I finally decided to give it a go. I’ve made my deconstructed sushi salad for so many years, but loved the idea of serving this sushi bake warm.

If you haven’t tried a sushi bake before, it’s basically a deconstructed sushi roll made with layers of sushi rice, furikake, and whichever type of seafood mixture you prefer. This spicy salmon sushi bake has all of the delicious flavors of a spicy salmon roll, except its baked and served warm with fresh avocado, sliced jalapenos, and all the sauces.

How to make spicy salmon sushi bake

There are so many ways to make this dish, so feel free to customize this recipe and add in anything you like. Here’s what you’ll need-

  • Sushi rice, or short-grain white rice- cooked and seasoned with rice vinegar, salt and sugar
  • Salmon– the salmon gets baked beforehand, so this recipe can work well with leftover baked salmon
  • Scallions– to mix in with the baked salmon
  • Cream cheese– optional, but I like to add it to the salmon mix
  • Furikake– a Japanese seasoning made from sesame seeds, dried seaweed flakes, and a few other ingredients
  • Spicy mayo: made from mayo, sriracha and a little sesame oil
  • Sweet sauce: eel sauce or a teriyaki variation will work in this recipe
  • Avocado and jalapenos to top
  1. Start by baking the salmon with your spices or teriyaki sauce, or using leftover baked salmon. Mash it in bowl with scallions, cream cheese (optional), and your spicy mayo.
  2. Next, prepare the sushi rice and season it. Add it to a baking dish and top it with a sprinkle or furikake or crushed seaweed snacks, followed by the salmon mix. Top with a drizzle of spicy mayo and eel sauce
  3. Bake the dish for 10 minutes 400 F, then set it under the broiler for 2 minutes
  4. Top with avocado slices, jalapenos and sesame seeds
  5. Serve warm and enjoy

Ingredients

Sushi Rice

  • 1 cup sushi rice or short grain rice
  • 1 1/2 cups water
  • 1 1/2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt

Spicy Baked Salmon

  • 1-1.5 lbs salmon fillet
  • Salt & pepper
  • 2 tbsp coconut aminos or low-sodium soy sauce
  • 1 tsp honey
  • 1 clove crushed garlic
  • 2 scallions
  • 2 tbsp spicy mayo
  • 2 tbsp cream cheese

Homemade Spicy Mayo

  • 1/2 cup mayo
  • 1/3 cup sriracha
  • 1 tsp sesame oil

Toppings

  • Eel sauce (unagi sauce), or other sweet sauce like teriyaki
  • Furikake (savory Japanese rice seasoning), I got mine from trader joes, or crushed seaweed snacks
  • Sesame seeds
  • Scallions, chopped
  • Sliced Jalapeños
  • Avocado, sliced

Directions

  1. Preheat the oven to 375 F
  2. Rinse the sushi rice then add it to a pot with the water. Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes until all the water is absorbed. Remove from flame and season with the rice vinegar, salt and sugar and stir to combine. Set aside.
  3. While the rice cooks, season the salmon with salt and pepper. Combine the coconut aminos, honey and garlic in a bowl and rub over the fish. Bake the salmon for 15-18 minutes, depending on thickness. Once done, remove the salmon skin and add the salmon to a bowl
  4. Flake the salmon with a fork and add the scallions, cream cheese and spicy mayo. Combine together until evenly mixed
  5. Raise the oven temperature to 400 F
  6. Flatten the rice into a 9 x 9 baking dish, then sprinkle furikake seasoning over the top, or crushed seaweed snacks
  7. Add the salmon mix over the rice, then top the salmon layer with a drizzle of sweet sauce and spicy mayo
  8. Bake the dish for 10 minutes, then set it under the broiler for 2-3 minutes
  9. Once done, garnish with sesame seeds, more sauces, avocado, scallions and jalapeños
  10. If you plan to prepare this dish a few hours in advance, I suggest layering the cooked rice and salmon ahead of time, then baking it before serving

Great recipe!

I’ve probably made this close to 10x over the past few years since my family really likes it. I cut down on the mayo but it’s person preference (not a big mayo fan and salmon is already fatty). It’s a great recipe!

Love this recipe! It has all my favorites in it. Made this for dinner tonight. I cooked the rice the night before and used our leftover bbq salmon from last night. We will have this often I’m sure. We often have bbq salmon, and halibut and I think I can use both for this recipe.
