Arugula Burrata Salad

This fresh arugula salad is made with burrata, blood oranges, and crunchy nuts. It’s such a pretty salad to serve at your next holiday dinner or dinner party! Plus, it’s packed with rich flavor and nutrients. 

I love to serve it on a platter as pictured to truly capture the brightness of all of the ingredients. I topped it with a simple balsamic dressing made with cold-pressed extra virgin olive oil, which truly brings all of the flavors together.

Fresh Press Farms Olive Oil

I’ve been using Fresh Press Farms olive oil for the past couple of months, and I absolutely love the variety they offer for different types of cooking. Fresh Press Farms olives are harvested, cold pressed, bottled and distributed right on their farm in Iron City, GA to provide the best possible flavor and quality. 

For this recipe, I used their cold-press bold olive oil for its rich & bold flavor, which added the perfect flavor to this dish. Cold pressed extra-virgin olive oil is ideal for salad dressings to truly capture the rich, olive oil flavor.

Olive Oil Nutrition

Olive oil is a staple in almost every household, and for good reason. It’s a rich source of heart-healthy fats and antioxidants, and is so versatile. 

Fresh Press Farms never heat their oil above 115 F, to help maintain their natural flavors and nutrients, like vitamins E, B, C, A & D. They’re a staple in my kitchen, and come in the prettiest recyclable aluminum bottles that are easy to pour out of and drizzle.

What you’ll need to make this arugula burrata salad:

  • Arugula- the arugula keeps this salad light and fresh. It’s the perfect base for this citrus salad
  • Fresh Press Farms extra virgin bold olive oil, to capture the rich flavor of the oil 
  • Oranges- I love using blood oranges for their gorgeous color, but any citrus variety would work for added freshness and sweetness
  • Burrata, or fresh mozzarella 
  • Roasted pistachios and chopped walnuts, for an added crunch 
  • Homemade balsamic vinaigrette

This salad is the perfect side dish if you’re hosting friends or family. The colors are gorgeous, and it’s always a crowd pleaser!

Ingredients

  • 4 oz bag of arugula
  • 2 small blood oranges, peeled and sliced
  • 8 oz burrata, cut into pieces
  • ¼ cup roasted pistachios, crushed
  • ¼ cup walnuts, chopped
  • Fresh Press Farms Bold Olive Oil

Balsamic Dressing

  • 1 tbsp Fresh Press Farms Bold Olive Oil
  • Juice from ½ lemon
  • 1 tbsp balsamic vinegar
  • ½ tsp dijon mustard
  • ½ tsp honey
  • 1 clove garlic, crushed
  • Salt & pepper

Directions

  1. Layer the arugula on a large serving platter
  2. Drizzle lightly with the olive oil
  3. Top with the sliced blood orange, burrata and nuts
  4. In a small bowl, combine the dressing ingredients together and mix well
  5. Once all the salad toppings are added, pour the dressing over the salad. I prefer leaving the salad unmixed, so be sure to spread the dressing around evenly
