Hot Honey Beef Bowls

A while back, hot honey beef bowls with sweet potatoes and cottage cheese were the biggest trend. While I don’t mix meat and dairy for kosher reasons, I can confidently say these bowls are just as delicious without the cottage cheese. They’re made with roasted sweet potato halves, spiced ground beef and pickled red onions.

The sweet potato halves are roasted with olive oil and salt, and baked upside down so they come out perfectly crisp yet tender. The hot honey adds the most delicious sweet and spicy flavor, and everything tastes delicious over arugula with some fresh avocado.

This recipe can easily double as meal prep for the week. Simply prepare all of the components, and assemble them together when ready to serve. The beef and sweet potatoes reheat well, and the pickled onions taste even better a day or two after they marinate.

Hot Honey Beef Bowls

Ingredients you’ll need for hot honey beef bowls

  • Ground beef– I used lean ground beef
  • Spices– paprika, smoked paprika, cumin, cinnamon, garlic powder, turmeric, salt & pepper
  • Hot honey
  • Olive oil 
  • Sweet potatoes
  • Homemade pickled red onions
  • Avocado and arugula, to serve
  1. First, prepare the pickled onions. Thinly slice the red onion and add it to a jar. Top it with the hot water, vinegar, sugar and salt and shake well. Let it marinate for at least 20-30 minutes
  2. Next, slice the sweet potatoes in half and rub them with olive oil and salt. Bake them face down on 400 F for about 45 minutes. Flip them, top with a drizzle of hot honey and finish baking for another 10 minutes
  3. While that bakes, cook the ground beef. Heat olive oil in a pan and brown the meat for about 15 minutes with the spice mix, then mix in a tbsp of hot honey
  4. Once the meat and potatoes are ready, serve them in a bowl with avocado, arugula, the pickled red onions and a drizzle of hot honey

This recipe is truly so easy to whip up and packed with flavor. You can sub regular honey if feeding children, and serve this with any combination of veggies/sauces you like!

Ingredients

  • 4-5 small sweet potatoes cut in half lengthwise
  • 1 lb ground beef
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp turmeric
  • 1/4 tsp cumin
  • 1/4 tsp cinnamon
  • 1/4 tsp smoked paprika
  • Olive oil
  • Hot honey

Pickled Onions

  • 1 red onion thinly sliced
  • 1/2 cup apple cider vinegar
  • 1/4 cup hot water
  • 1-2 tbsp sugar
  • 1 tsp salt

Serve with

  • Avocado
  • Arugula

Directions

  1. First, prepare the pickled onions- these can be prepared 1-2 days in advance. Thinly slice the red onion and add it to a jar. Top it with the hot water, vinegar, sugar and salt and shake well. Let it marinate for at least 20-30 minutes before serving. Keep refrigerated for up to 1 week
  2. Preheat the oven to 400 F
  3. Add the sliced sweet potatoes to a large sheet pan. Drizzle with olive oil and season with salt. Place the sweet potato halves face down onto the pan.
  4. Bake for 45 minutes. Remove them from the oven and flip them over. Drizzle with hot honey and bake for another 10 minutes.
  5. In the meantime, prepare the ground beef. Heat a skillet with about 3 tbsp of olive oil. Add the beef and break it apart into small pieces.
  6. Add the spices and cook on medium heat for about 15 minutes, until the meat is browned. If the spices start to stick to the pan, add about 2-3 tbsp of water to help loosen it up. Mix every few minutes. Towards the end, drizzle about 1 tbsp of hot honey and mix it into the beef.
  7. Serve the sweet potatoes and beef with avocado, pickled red onions and arugula salad. Top with a light drizzle of olive oil and hot honey

thank you for sharing your take on this very tasty recipe! everyone enjoyed it thoroughly enjoyed it, including our 4.5 year old. we cooked everything with regular honey – adults added chili flakes when serving. and adding pickled shallots was so on point.
