These easy tuna patties have become part of my weekly meal prep rotation. I always have cans of tuna lying around for a quick protein, but sometimes crave something a bit more heartier. These tuna patties are quick to throw together and have the perfect hint of spiciness.

They even won over my tuna hating husband! That says a lot, trust me.

These tuna patties are perfect with a side salad, on a bun, or with a fun dip. I paired them with the most refreshing minty yogurt dip that’s made with the simplest ingredients-

  • Greek yogurt
  • fresh mint leaves
  • garlic powder
  • salt

That’s it! It’s so creamy and delicious, and would go great with fresh veggies, other grilled proteins, or with toasted bread.

These patties are a great make-ahead option for busy weeks, or an appetizer for when you have guests over. When I have a ton of recipes to test, I love having quick, nourishing foods that are ready to eat in the fridge to simplify my meals. I’ll usually throw one or two of these patties over a large salad and call it lunch!

The ingredients in these easy tuna patties are so minimal, you likely have them all at home.

What you’ll need for the spicy tuna patties:

  • canned tuna- I prefer mine in water
  • bread crumb- you can use gluten-free or regular. I’ve even pulsed my favorite crackers into a crumb mixture before
  • eggs
  • lemon
  • sriracha- because we love things spicy
  • garlic powder, salt & pepper!

You can leave out the sriracha if you don’t love the spice, and add in fresh herbs like parsley and cilantro for extra flavor.

Ingredients

  • 10 oz canned tuna in water (2 cans)
  • 1/2 cup whole wheat breadcrumbs (sub gluten-free if needed)
  • 2 eggs
  • 2 tbsp fresh lemon juice
  • 2 tsp sriracha
  • 1/2 tbsp lemon zest
  • 1/2 tsp garlic powder
  • Pinch of salt & pepper
  • Cooking spray, for grilling

Garlic Mint Yogurt Dip

  • 1/2 cup Greek yogurt, I used non-fat
  • 2 tbsp chopped mint leaves
  • 1/2 tsp garlic powder
  • Juice from 1/2 a lemon
  • 1/4 tsp salt

Directions

  1. Drain your tuna and toss into a medium bowl. Mash with a fork to break up the chunks.
  2. Toss in the eggs, breadcrumbs, lemon juice, zest, spices and sriracha and mix together.
  3. Heat a pan on medium heat. Grease with cooking spray.
  4. Form 4 palm sized patties and cook for 2-3 minutes, then flip for additional 1-2 minutes.
  5. For the yogurt dip, whisk all ingredients in a small bowl and serve on top of the patties.
  6. You can store the leftovers in the fridge for up to 1 week, or freeze them cooked for up to a month.

this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
