Honey Mustard Breaded Salmon

If you’re looking for an easy to make weeknight dinner that takes only 5 minutes of prep time, you need to try this honey mustard salmon. The salmon is brushed with a 2-ingredient honey mustard sauce then seasoned and topped with bread crumbs.

All you need is salmon, a few pantry staples and some fresh parsley. This recipe is packed with flavor and comes out perfect every time.

Honey Mustard Salmon

I shared a version of this recipe a few months back on my Instagram and it’s been a staple ever since. The recipe is light and fresh, and can be served with so many different sides.

The salmon flakes so easily and is packed with flavor. I love it with a loaded kale salad, roasted potatoes or a fresh pasta salad.

Ingredients you’ll need:

  • salmon
  • spices: paprika, garlic powder, salt & pepper
  • honey
  • djion mustard
  • breadcrumbs- you can use pre-seasoned, or season lightly with the above spices
  • olive oil
  • parsley
  • lemon juice

How to make honey mustard salmon

  1. Coat the salmon in the honey mustard mix then top with a mix of salt, pepper, garlic powder and paprika
  2. In a small bowl, season the breadcrumbs lightly with the same spices then toss together with chopped parsley and olive oil. Sprinkle over the salmon and gently press down
  3. Top the salmon with a light drizzle of olive oil, then bake for about 12-15 minutes

Depending on the thickness of your salmon, you may need to adjust the cooking time. It should flake easily when ready. If you’re preparing this recipe with 4 individual fillets, you will likely need to bake it for less time, closer to 10-12 minutes.

Ingredients

  • 1 -1.2 lbs salmon, or 4 individual fillets
  • 1/4 cup bread crumbs
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 2 tbsp parsley, chopped
  • 1 tsp olive oil, plus more to drizzle
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • Lemon juice, to top

Directions

  1. Preheat the oven to 400 F
  2. In a small bowl combine the mustard and honey and whisk until smooth. Brush the mix over the salmon, then rub the top with the spices.
  3. In a small bowl, mix together the bread crumbs, chopped parsley, olive oil, and a light pinch of salt.
  4. Sprinkle the crumb mix over the seasoned salmon and press it down gently. Lightly drizzle with more olive oil
  5. Bake the salmon for about 12-15 minutes, depending on the size and thickness. If you’re using individual fillets, baking time may be around 10-12 minutes.
  6. Once ready, finish off with fresh squeezed lemon juice.

this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
