Balsamic Date Kale Salad with Fried Halloumi 

Balsamic date kale salad with fried halloumi! A delicious sweet and savory kale salad made in partnership with Natural Delights Medjool Dates. 

Kale salads are one of my favorite salads to make during the fall. They add a rich and flavorful base to any dressing, and can be topped with endless toppings.

The sweet and savory kale salad is made with a creamy balsamic date vinaigrette, then topped with fried halloumi, slivered almonds, and Natural Delights Pitted Organic medjool dates for the ultimate sweetness.

Natural Delights Medjool Dates 

Natural Delights® medjool dates are one of my pantry must-haves. They’re a great source of carbs, fiber and potassium, and an ideal snack whenever you need a long-lasting energy boost. I love stuffing them with nut butter or cheese, but they also make the best salad toppers or natural sweeteners.

Last week, I was lucky enough to join the Natural Delights team in Yuma, Arizona where we got to meet with some of the date growers and pick all of the ripened dates off of the trees. Their dedication to sorting through only the best product is another reason why I’m such a huge fan.

The Natural Delights Pitted Organic medjool dates were the perfect addition to this kale salad. They add a natural sweetness to the dressing and salad itself, and truly bring all of the flavors together. 

What you’ll need to make Balsamic Date Kale Salad:

  • Kale- I prefer using tuscan kale for this recipe, and try to purchase pre-chopped to save some time
  • Halloumi- the fried halloumi adds a delicious savory touch to this salad. If you have a hard time finding halloumi, you can swap crumbled feta or goat cheese
  • Natural Delights medjool dates- you’ll need some for the dressing, and some to add to the salad
  • Roasted almonds- you can buy slivered almonds, or chop up your favorite roasted almonds using a knife
  • Balsamic date vinaigrette- made with balsamic vinegar, medjool dates, olive oil, garlic, dijon mustard, salt & pepper

Ingredients

  • 10 oz Tuscan Kale, trimmed and chopped
  • 8 oz halloumi, or substitute feta cheese
  • 4 Natural Delights Pitted Organic medjool dates, chopped
  • ½ cup toasted, sliced almonds
  • 1 tbsp olive oil

Balsamic Date Dressing

  • ¼ cup balsamic vinegar
  • ⅓ cup olive oil
  • 2 Natural Delights Pitted Organic medjool dates
  • 1 tsp dijon mustard
  • 1 clove garlic
  • 2 tbsp water
  • Salt & pepper

Directions

  1. Prepare the balsamic date dressing by adding all of the ingredients into a blender and blending until smooth. Add salt & pepper to your liking
  2. Add the chopped kale to a large salad bowl and pour the dressing over the top. Massage the dressing into the kale, using your hands or tongs, for at least 1 minute to soften the kale. Let it sit while you prepare the halloumi
  3. Cut the halloumi into 1” pieces. Heat a large skillet with olive oil on medium heat. Once hot, add the halloumi pieces and cook for about 30-40 seconds per side until browned.
  4. Add the halloumi to the salad and top with the slivered almonds and chopped dates
  5. Toss everything together and enjoy!

one thing about me is I will always have a colorful pasta salad in the fridge during the warmer months— it’s the perfect way to pack in carbs, fiber and protein for a quick & nourishing lunch
 
this one combines @kensdressings Simply Vinaigrette Lemon Dressing & Ken’s Simply Vinaigrette Greek Dressing for the ultimate flavor combo— fresh, zesty & full of herbs!

Recipe:
1 lb pasta, I used rigatoni
2 small zucchini, cut into rounds then quarters
1 cup roasted corn, I use pre-roasted frozen corn, thawed.
1 can (15 oz) cannellini beans, drained
1 red bell pepper or 1 cup mini peppers, sliced
4 oz feta cheese, crumbled
⅓ cup green olives, chopped. I used castelvetrano
2-3 cups arugula
Ken’s Simply Vinaigrette Lemon Dressing
Ken’s Simply Vinaigrette Greek Dressing
Salt & pepper
 
1. Prepare the pasta as instructed on the package. Drain and set aside
2. Preheat the oven to 425 F. Add the quartered zucchini to a baking dish and toss with 2 tbsp of Ken’s Simply Lemon Vinaigrette with a pinch of salt. Bake or air-fry for about 25 minutes on the top rack
3. Once the zucchini is ready, add it to a large mixing bowl with the cooked pasta, roasted corn, white beans, feta cheese, olives, sliced peppers, and arugula.
4. In a small bowl, combine ¼ cup of the Ken’s Simply Vinaigrette Lemon + ¼ cup of the Ken’s Simply Vinaigrette Greek. Mix well and toss with the pasta. Season with salt & pepper as needed
5. Leftovers can be refrigerated for up to 4 days.
