Citrus Salmon

I’ve been on a huge citrus kick lately, and love adding fresh citrus to savory recipes, like in this arugula citrus salad. This herb crusted salmon is truly the perfect spring recipe, and I can’t get enough of it!

The salmon is coated in a simple herb crust made from fresh parsley, dill, lemon and orange zest, and olive oil. It’s then topped with layers of blood orange slices and navel oranges to give it a pop of color, and baked until its perfectly flakey.

You can prepare this recipe during the week as a simple dinner, or serve it at your next dinner party. It’s the perfect Easter or Passover recipe to make for a large crowd, and can be served with nearly any side dish you like.

I love it with a fresh salad and some roasted potatoes on the side.

How to make citrus herb salmon

This recipe was inspired by one I saw on both Food52 and Diane Morrisey’s page on Instagram. It’s so simple to make, and truly packs in so much delicious flavor.

Here’s what you’ll need:

  • Salmon filet
  • Olive oil
  • Dijon mustard
  • Maple syrup
  • Fresh lemon and orange zest
  • Parsley
  • Dill
  • Salt & pepper
  • Fresh orange and blood orange slices

Create a paste using the olive oil, herbs and flavorings then spread it over the salmon. Layer the fresh orange slices on the top, and bake the fish until its cooked to your liking.

The salmon is sweet, zesty, and melts in your mouth. It’s easy enough to make during the week, and a definite crowd please for your next gathering.

Ingredients

  • 1.5 -2 lbs salmon
  • Salt & pepper
  • 1 orange
  • 1 blood orange

Citrus Herb Coating

  • 2 tbsp dijon mustard
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp orange zest
  • 1 tsp lemon zest
  • 2 cloves garlic, crushed
  • 3 tbsp chopped fresh parsley
  • 3 tbsp chopped fresh dill
  • Salt & pepper

Directions

  1. Preheat the oven to 375 F
  2. Pat the salmon fillet dry and season generously with salt & pepper.
  3. In a small bowl, combine all of the citrus herb ingredients to form a paste. Rub it evenly over the salmon to coat the top.
  4. Slice half of the orange and the blood orange into thin slices and layer them over the salmon. You can layer any extra slices underneath the fish for additional garnish.
  5. Bake for about 18-20 minutes, depending on the size and thickness of your fish.
  6. Garnish with fresh chopped parsley and lemon juice and enjoy!
