Thai Peanut Salad

Ingredients

  • 4 cups kale
  • 2 cups lettuce, chopped
  • 2 persian cucumbers, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 carrots, peeled and thinly sliced
  • 1 cup shredded cabbage
  • 1/4 cup cilantro, chopped
  • 1/3 cup roasted cashews, or peanuts
  • 3-4 mint leaves, chopped

Peanut Sauce

  • 1/3 cup natural peanut butter
  • Juice from 1/2 lime
  • 3 tbsp coconut aminos or low sodium soy sauce
  • 2 tbsp honey or pure maple syrup
  • 2 tsp sriracha
  • 1 tsp grated ginger
  • 1 clove of garlic, crushed
  • 2 tbsp of water, or more if needed or sub coconut milk
  • Salt to taste

Directions

  1. In a small blender or food processor, add the sauce ingredients and blend until smooth. You can also use an immersion blender for this step. Taste and adjust salt as needed. Add 1-2 tbsp more liquid as needed to thin the sauce out.
  2. Add the shredded kale, lettuce and remaining salad ingredients to a large bowl. Toss with the dressing and mix well.
  3. Serve with your favorite protein or as is!
