Ground Beef Stir Fry

Ingredients

  • 1 lb ground beef
  • 1 yellow onion diced
  • 1 zucchini diced
  • 1 red bell pepper diced
  • 2 carrots peeled and diced
  • 1 cup shelled edamame fresh or frozen
  • 1/4 cup olive oil
  • 2 cloves garlic grated
  • 1 tsp grated ginger
  • 1 tbsp sesame oil
  • Salt & pepper

Sauce ingredients

  • 1/3 cup coconut aminos or sub 1/4 cup low-sodium soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame seeds
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Directions

  1. Heat a skillet with 1/4 cup olive oil. Add in the diced onion and saute for about 7-8 minutes until browned.
  2. Add in the grated garlic, ginger, ground beef. and pinch of salt & pepper. Cook on a medium flame for about 10 minutes to brown the meat. Be sure to break apart the meat into small chunks.
  3. Add the diced vegetables to the pan with the sauce ingredients. Toss together and cover the pan. Cook on medium/high heat for 10 minutes to steam the vegetables.
  4. Uncover the pan and add the edamame, chopped scallions, and 1 tbsp of sesame oil. Mix together and adjust salt if needed. Continue cooking uncovered for another 15-20 minutes on medium/high heat. Toss every couple of minutes until the sauce has thickened and the vegetables caramelize.
  5. Garnish with sesame seeds and extra scallions
