Roasted Chicken and Cauliflower

Ingredients

  • 1.5-2 lbs boneless chicken thighs
  • 1 head of cauliflower
  • 1/3 cup olive oil
  • 2 tbsp date syrup
  • 1 tbsp paprika
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • Fresh parsley, to top

Directions

  1. Preheat the oven to 425 F
  2. Trim the stem off of the cauliflower and cut it into small florets. Add it to a large baking sheet
  3. Cut the chicken thighs into 1" pieces and add them to the baking sheet with the cauliflower.
  4. Toss the chicken and cauliflower with the olive oil, date syrup and spices, mix well.
  5. Bake on 425 F for 30 minutes. Set the pan under the broiler for 2 minutes at the end.
  6. Garnish with fresh parsley or cilantro when serving. I served this over rice with pickled beets.
