Coffee Chia Pudding

Ingredients

  • 1/4 cup chia seeds
  • 1 cup milk of choice
  • 1 tbsp instant coffee brewed with 1/4 cup boiling water or sub 2 shots of espresso
  • 1 1/2 tbsp of sweetener I used maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon

Directions

  1. Add the chia seeds, cinnamon, brewed coffee, milk, vanilla extract and sweetener and to a small dish or container and whisk well.
  2. Refrigerate overnight or for at least 6 hours to thicken. If the mix is still thin, add 1-2 more tbsp of chia seeds to help thicken it. The longer it sits, the thicker it will get.
  3. Once chilled, whisk again to break up any chia clumps.
  4. Serve with greek yogurt, fresh fruit and granola
  5. Keep refrigerated for up to 5 days
